Recipes

The idea for this blog came from an early autumn walk along part of the West Highland Way. Getting my flask out of my rucksack my walking partner commented on my choice of soup and how I should be known as Mountain Soup Man due to my love of making soup and my love of being outdoors. The recipes in this blog are not a la carte, will not feature in a Michelin starred tasting menu but are easy and tasty for those cold moments on the trails. Enjoy!!

I am always joking with the Soup Dragon, my long suffering wife that the key to great Leek and Potato soup is plenty of leeks. To This end I tend to add more than most recipes recommend. My recipe for this soup is as follows:

3 leeks

1 kilo potatoes

2 knorr chicken stock pots

1 piece of boiling beef

salt and pepper to taste.

2 litres water

This really could not be easier, put the water, boiling beef and stock pots in a large pan and bring to the boil. Peel and chop the potatoes and put in the pan, take the outer layer of peel from the leek, cut of the bottom and top and then chop the middle section into rings and add to the pot, discard the top and bottom.

Add salt and pepper to tase and leave to simmer for one hour 30 minutes.

After this time remove the boiling beef, which in my opinion is the finest tasting of all beefs. Enjoy hot or in you lunchtime piece. 

Blend the soup mixture until smooth and that is it, Enjoy!

Carrot and Courgette

I can't take credit for this particular recipe but credit it to the Soup Dragon who prepared it with great skill and dexterity. I am not the greatest vegetable fan and in particular courgettes do not fill me with a warm cosy feeling but I have to admit this soup was delicious. So to get this cracking good soup you need:

1 onion

6 medium sized carrots

6 medium sized courgettes

1 litre of chicken stock, (adding more or less depending on whether you like thick or thin soup)

Peel and chop everything into a large pot, simmer until the vegetables are soft. Finally liquidise until smooth. Season to taste. Perfect for a cold day.

Once more the Soup Dragon saved the day by whipping up a batch of soup. This one was inspired by the surplus of tomatoes and peppers she has at the moment. The recipe is as follows:

1 onion

8 Red Peppers

8 Tomatoes (tinned if you do not have fresh)

2 litres of chicken stock

2 cloves of Garlic

half a teaspoonful of chilli flakes (more or less to taste)

Char the skin of the peppers under the grill or with a flame, allow to cool, remove the skin and seeds and discard these.

Peel and chop everything into a large pot, simmer until the vegetables are soft. Finally liquidise until smooth. Season to taste. Perfect for when it is not too cold.
